We cook quesadillas in the middle decks (the cheese melts nicely, the tortillas are moist), fajitas in the upper deck (then we put them in the grill for a few minutes for perfect tenderness and flavor). Flans in the morning in the bottom deck, etc.
We found many uses for the Multideck peerless oven, and, "everything comes out perfect! The Maximizer is the best oven for our Mexican Restaurants. We have purchased 9 ovens to replace other types, and are preparing to buy another one.THe oldest oven is about 18 years old and maintenance cost has been negligible.
