I wanted to write you to compliment you and your staff on the new CW61 we just purchased from you. Our family has been in the pizzeria business for over 30 years now, with two Peerless CW61's the whole time. One Model is from the 1950's and one is form the 1970's.

Both ovens have been the work horses of our business, and we where a little distraught at the thought of having to replace one. We didn't believe the new models could be as good as the old one's, with the bricks being different, fancy new burners that may or may not fire enough, even the venting looked different. No way will new ovens cook as good as these old ones.

After a few converstations with you though, you convinced us to purchase a new oven. Every now and again I like to be proven wrong. Your new oven cooks as good a pizza as we've ever cooked. The heat is more even, the bricks heat better and stay hotter longer, and we all think the oven is easier to operate because you don't have to spin and rotate your pie's as much.

The oven we replaced is our 1970's, with the BJ thermostat and burner, it's on it's way to you to see if you can breath some new life into it. Our 1950's model is still cooking great with the new burners you sold us, and I look for it to continue to do so. The 2004 CW61 is our new work horse now.

I didn't think any company was still looking to improve their deck ovens, but Peerless may have perfected theirs. That's why I have decided to be your Central Ohio rep. I hope this will work out well for both of us.
