2324/2348 SET UP AND CALIBRATION

See attached Start-Up Check List & Thermostat Calibration and By Pass Calibration & BAKING STONE INSTALLATION INSTRUCTIONS AND BAKING SUGGESTIONS.

A qualified service technician must perform the following:

…in this order

1.) MANIFOLD Operating Gas Pressure must be checked:

NAT GAS – it should be 4” of water column, as measured using a monometer.

LP GAS – it should be 10” of water column, as measured using a monometer

2.) BY PASS must be set – this ensures the low flame setting on the burners is correct. (see attached instructions)

3.) THERMOSTAT must be calibrated; (see attached instructions) (When Calibrating, measure temperature in the 2nd Deck from the top).

The second deck from the top is your primary deck. Always use this deck first when cooking.

4.) Properly set Heat Baffles located on the side of each deck (they slide)

You set them initially as such:

TOP DECK – FULLY CLOSED

2ND DECK – 25% OPEN

3RD DECK – 50% OPEN

BOTTOM DECK – FULLY OPEN

With experience, you can make adjustments to these initial settings.

The distribution of heat between decks is based on natural convection and back pressure.
